How to do panoramic images on landscape formats?

I am designing a wedding photo book, using the 7x5 format (attendant gifts), and was wondering what tips/tricks I should know. I read that I should keep images 1/8"away from the edges, but would that be the case where an image crosses over the binding, or should there be an overlap?
How have some of you handled this? Thanks for posting!
