It's awfully hard to do something simple

We have many templates that are just a plain background (with one image per page) Most of them are under General Photogaphy:

My pages were all designed and saved as 300 dpi jpegs at 8x10 by a graphic artist (my cousin :). I just want to print them in an 8.5x11 book. I don't need a template — just a simple background color so that they pop. I've looked for hours and can seem to find that option. Where is the easy simple stuff?
